Fried Cheesecake Bites
Ingredients:
1 package (8 oz) cream cheese, softened
1/4 cup granulated sugar
1 teaspoon vanilla extract
1 large egg
1/2 cup crushed graham crackers
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
Vegetable oil for frying
Powdered sugar for dusting
1 cup strawberry sauce (store-bought or homemade)
Directions:
In a mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
Add the egg and continue beating until fully incorporated.
Fold in the crushed graham crackers until evenly distributed.
Using a small cookie scoop, form the cheesecake mixture into bite-sized balls and place them on a baking sheet lined with parchment paper. Freeze for at least 1 hour or until firm.
Prepare three separate bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs.
Dip each frozen cheesecake ball into the flour, then the beaten eggs, and finally coat with panko breadcrumbs.
Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
Fry the cheesecake bites in batches for 2-3 minutes or until golden brown and crispy.
Remove with a slotted spoon and drain on a paper towel-lined plate.
Dust with powdered sugar and serve with strawberry sauce for dipping.
