Strawberry Crunch Banana Pudding
Ingredients:
For the Banana Pudding:
1/2 cup granulated sugar
1/3 cup cornstarch
1/8 teaspoon salt
2 3/4 cups whole milk
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the Crunch Layer:
1 1/2 cups crushed strawberry-flavored cereal (such as Strawberry Crunch or similar)
1/4 cup granulated sugar
1/4 cup unsalted butter, melted
For Assembly:
4-5 ripe bananas, sliced
Whipped cream (store-bought or homemade)
Instructions:
Prepare the Banana Pudding:
In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.
Gradually whisk in the whole milk until the mixture is smooth.
Cook over medium heat, stirring constantly, until the mixture begins to thicken and comes to a boil.
Reduce heat and cook for an additional 2 minutes, stirring constantly.
Remove from heat and whisk in the egg yolks. Return to heat and cook for an additional 2 minutes, stirring constantly, until the pudding is thick and creamy.
Remove from heat and stir in the unsalted butter and vanilla extract until well combined.
Transfer the pudding to a bowl, cover with plastic wrap (pressing the wrap directly onto the surface of the pudding to prevent a skin from forming), and let it cool to room temperature.
Prepare the Crunch Layer:
In a medium bowl, combine the crushed strawberry-flavored cereal, granulated sugar, and melted butter. Mix until the cereal is evenly coated and forms a crumbly mixture.
Assemble the Dessert:
In a serving dish or individual cups, spread a layer of banana pudding on the bottom.
Arrange a layer of sliced bananas on top of the pudding.
Sprinkle a layer of the strawberry crunch mixture over the bananas.
Repeat the layers until you reach the top of your dish, ending with a layer of the strawberry crunch.
Top with Whipped Cream:
Spread a layer of whipped cream on top of the final layer of crunch.
Chill and Serve:
