Red Velvet Cinnamon Rolls

Red Velvet Cinnamon Rolls 
Ingredients:
– 1 package red velvet cake mix (regular size)
– 2-1/2 to 3 cups all-purpose flour
– 1 package (1/4 ounce) active dry yeast
– 1-1/4 cups warm water (120° to 130°)
– 1/2 cup packed brown sugar
– 1 teaspoon ground cinnamon
– 1/4 cup butter, melted

For the Icing:
– 2 cups confectioners’ sugar
– 2 tablespoons butter, softened
– 1 teaspoon vanilla extract
– 3 to 5 tablespoons 2% milk

Directions:
1. In a large bowl, combine red velvet cake mix, 2-1/2 cups flour, and yeast. Stir in warm water and mix until combined. Gradually add the remaining flour until a soft dough forms. Knead for 5 minutes on a floured surface.
2. Place the dough in a greased bowl, cover, and let it rise for about 1 hour or until doubled in size.
3. Roll the dough into a large rectangle on a floured surface. Brush with melted butter, then sprinkle with brown sugar and cinnamon. Roll up tightly, starting from the long edge, and cut into 12 slices.
4. Place the slices into a greased baking dish, cover, and let rise for another 30 minutes.
5. Preheat the oven to 350°F (175°C) and bake the rolls for 20-25 minutes, or until golden brown.
6. To make the icing, beat confectioners’ sugar, butter, vanilla extract, and milk until smooth. Drizzle over the warm cinnamon rolls before serving.
