Piña Colada Cheesecake
Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/2 cup shredded coconut
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
3 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 cup crushed pineapple, well-drained
1/4 cup coconut cream or cream of coconut
3 large eggs
1 teaspoon vanilla extract
1 tablespoon cornstarch
For the Topping:
1/2 cup whipped cream (for garnish)
1/4 cup toasted shredded coconut
Pineapple slices or chunks
Maraschino cherries (optional)
Instructions
For the Crust:
Prepare the Crust: Preheat your oven to 325°F (163°C). In a medium bowl, combine the graham cracker crumbs, shredded coconut, granulated sugar, and melted butter. Press the mixture evenly into the bottom of a 9-inch springform pan.
Bake the Crust: Bake for 8-10 minutes or until slightly golden. Set aside to cool while you prepare the filling.
For the Cheesecake Filling:
Beat the Cream Cheese: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the sugar and beat until combined.
Add the Wet Ingredients: Mix in the crushed pineapple, coconut cream, vanilla extract, and cornstarch until well combined.
Add the Eggs: Add the eggs one at a time, beating on low speed after each addition until just combined (don’t overmix to avoid air bubbles).
Pour the Filling: Pour the cheesecake filling over the cooled crust, spreading it evenly.
Bake the Cheesecake:
Bake: Place the cheesecake in the oven and bake for 50-60 minutes, or until the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool gradually for an hour to prevent cracks.
Chill: Transfer the cheesecake to the refrigerator to chill for at least 4 hours or overnight for best results.
Serve and Garnish:
Garnish: Once chilled, remove the cheesecake from the springform pan. Top with whipped cream, toasted coconut, pineapple slices or chunks, and maraschino cherries if desired.
