These no-bake pumpkin cheesecake balls are the ultimate fall treat! Packed with pumpkin spice flavor and a creamy cheesecake filling, they’re perfect for a quick dessert that everyone will love. No oven needed—just mix, chill, and enjoy!

Ingredients:
– 1 cup pumpkin puree
– 8 oz cream cheese, softened
– 1 1/2 cups graham cracker crumbs (plus extra for rolling)
– 1/2 cup powdered sugar
– 1 tsp pumpkin pie spice
– 1 tsp vanilla extract
– 1/4 tsp ground cinnamon
– 8 oz white chocolate, melted (for dipping)

Directions:
1. In a large mixing bowl, beat together the pumpkin puree and softened cream cheese until smooth and well combined.
2. Add the graham cracker crumbs, powdered sugar, pumpkin pie spice, vanilla extract, and ground cinnamon. Mix until all ingredients are fully incorporated.
3. Cover the mixture and refrigerate for 1-2 hours, or until firm enough to roll into balls.
4. Once chilled, roll the mixture into small balls, about 1 inch in diameter. Roll each ball in additional graham cracker crumbs to coat.

5. Dip each ball into the melted white chocolate, using a fork to roll them around and fully coat. Place the coated balls on a baking sheet lined with parchment paper.
6. Once all the balls are dipped, place the baking sheet in the refrigerator to chill for 30 minutes, or until the white chocolate is set.
7. Serve chilled and enjoy!
