Broad Bean Pasta

Ingredients:
300g pasta (your choice)
200g broad beans, shelled
2 tbsp olive oil
2 garlic cloves, minced
1 lemon, zested and juiced
50g Parmesan cheese, grated
2 tbsp fresh mint, chopped
Salt and pepper to taste
Extra Parmesan and mint leaves, for garnish

Directions:
Cook Pasta: Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Reserve 100ml of pasta water, then drain.
Prepare Broad Beans: While the pasta is cooking, blanch the broad beans in boiling water for 2 minutes. Drain and refresh in cold water, then remove the outer skins.
Sauté Garlic: Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Combine Ingredients: Add the cooked pasta, broad beans, lemon zest, juice, and reserved pasta water to the pan. Toss well to coat. Stir in the grated Parmesan and chopped mint. Season with salt and pepper.
Serve: Serve the broad bean pasta in bowls, garnished with extra Parmesan

and mint leaves.
