Here’s a simple and delicious recipe for chicken curry with rice:
### Chicken Curry Recipe
#### Ingredients
– **For the Chicken Curry:**
– 500g chicken (bone-in or boneless, cut into pieces)
– 2 tablespoons oil (vegetable or mustard)
– 1 large onion, finely chopped
– 2 tomatoes, finely chopped
– 2-3 cloves garlic, minced
– 1-inch piece ginger, minced
– 2 green chilies, slit (optional)
– 1 teaspoon cumin seeds
– 1 teaspoon coriander powder
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder (adjust to taste)
– 1 teaspoon garam masala powder
– 1/2 cup plain yogurt (optional, for a richer gravy)
– Salt to taste
– Fresh coriander leaves, chopped (for garnish)
– Water, as needed
– **For the Rice:**
– 1 cup basmati rice
– 2 cups water
– 1 tablespoon ghee or butter (optional)

– Salt to taste
#### Instructions
1. **Prepare the Rice:**
– Rinse the basmati rice under cold water until the water runs clear.
– In a pot, bring 2 cups of water to a boil. Add the rice, salt, and ghee or butter.
– Reduce the heat to low, cover, and cook for about 15 minutes or until the rice is tender and all the water is absorbed. Fluff the rice with a fork and set aside.
2. **Make the Chicken Curry:**
– Heat oil in a large pan or wok over medium heat. Add cumin seeds and let them splutter.
– Add the chopped onions and sauté until they turn golden brown.
– Add the minced garlic, ginger, and green chilies. Sauté for another 1-2 minutes.
– Add the chopped tomatoes and cook until they become soft and oil starts to separate.
– Add the coriander powder, turmeric powder, red chili powder, and salt. Mix well.
– Add the chicken pieces and cook for 5-7 minutes until they are lightly browned.
– Add yogurt, if using, and mix well. Add water as needed to achieve the desired consistency.
– Cover and simmer for 15-20 minutes or until the chicken is cooked through and tender.
– Stir in garam masala powder and cook for another 2 minutes.
– Garnish with fresh coriander leaves.
3. **Serve:**
– Serve the chicken curry hot with the prepared rice. You can also add a side of salad, raita, or pickles for a complete meal.
