Ingredients:
For the Battered Cod:
4 cod fillets
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1 cup cold club soda or beer
Vegetable oil for frying
For the Sandwich:

4 sandwich rolls or brioche buns
4 leaves of lettuce
4 slices of tomato
Tartar sauce or mayonnaise
For the Onion Rings:
2 large onions, sliced into rings
1 cup all-purpose flour
1/4 cup cornstarch
1 tsp baking powder
1/2 tsp garlic powder
1/2 tsp paprika
Salt and pepper to taste
1 cup cold club soda or beer
Instructions:

Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
In two separate bowls, mix together the dry ingredients for both the cod and onion ring batters (flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper).
Gradually whisk in cold club soda or beer into both the cod and onion ring batters until smooth.
Dip each cod fillet into the batter, letting the excess drip off, and carefully place into the hot oil. Fry for 4-5 minutes per side until golden and crispy. Remove and drain on paper towels.
For the onion rings, dip each ring into the batter and fry in batches until golden and crispy, about 2-3 minutes per batch. Drain on paper towels.
To assemble the sandwiches, spread tartar sauce or mayonnaise on the sandwich rolls. Add lettuce, tomato, and the crispy battered cod fillet.
Serve the sandwiches alongside the crispy onion rings. Enjoy your delicious fish sandwich feast!
