Ingredients:

1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 tsp sugar
3/4 cup warm water
1/2 cup warm milk
1 tsp active dry yeast
Butter for cooking

Prepare the Batter:

In a small bowl, mix the yeast with the warm water and sugar, and let it sit until it becomes frothy, about 5 minutes.
In a large bowl, sift together flour, baking powder, and salt.
Add the yeast mixture and warm milk to the dry ingredients, and whisk until you have a smooth, thick batter.
Cover the bowl with a cloth and let the batter rise in a warm place until it’s bubbly, about 1 hour.

Cook the Crumpets:

Heat a non-stick skillet over medium-low heat and lightly grease with butter.
If you have crumpet rings, grease them and place in the skillet. Pour enough batter into each ring to fill about halfway.
Cook for about 4-5 minutes until bubbles form on the surface and the edges look set. Remove the rings, flip the crumpets, and cook for another 2-3 minutes until golden.

Serve:

Serve the crumpets warm, topped with a generous drizzle of honey and extra butter if desired.
