Swirled Strawberry Cheesecake
Ingredients:
For the Crust:
• 2 cups graham cracker crumbs
• 1/4 cup unsalted butter, melted
For the Cheesecake Filling:
• 24 oz (680g) cream cheese, softened
• 1 cup granulated sugar
• 1 cup sour cream
• 1 teaspoon vanilla extract
• 3 large eggs
• 1/4 cup strawberry puree
For the Strawberry Swirl:
• 1/2 cup strawberry puree
• 2 tablespoons sugar
For the Topping:
• Fresh strawberries
• Whipped cream
Instructions:
1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
2. Combine graham cracker crumbs and melted butter. Press the mixture firmly into the bottom of the pan.
3. Bake for 10 minutes, then let it cool.
Step 2: Make the Cheesecake Filling:
1. In a large mixing bowl, beat the cream cheese until smooth.
2. Add the sugar, sour cream, and vanilla extract, mixing until creamy.
3. Add eggs one at a time, blending thoroughly after each addition.
4. Pour in the strawberry puree and gently swirl it through the mixture.
Step 3: Strawberry Swirl:
1. In a small saucepan, combine the strawberry puree and sugar. Simmer until slightly thickened, about 5 minutes. Let cool.
2. Drop spoonfuls of the strawberry mixture onto the cheesecake filling and use a knife to create a swirl pattern.
Step 4: Bake the Cheesecake:
1. Pour the cheesecake filling over the crust.
2. Bake for 60-70 minutes, or until the center is set.
3. Allow the cheesecake to cool in the oven with the door slightly open for 1 hour, then refrigerate for at least 4 hours.
Step 5: Add the Toppings:
1. Top with fresh strawberries and a dollop of whipped cream before serving.
